Walk in and you’re greeted by old photos, the hiss of griddle glory, and cases of colorful ice cream that might distract you – until the fried bologna arrives. A thick, half-inch slab is seared on the flat-top, charred just right, and served on a soft bun. Add iceberg lettuce, tomato, mayo, raw onion if you dare.
